| dc.description.abstract | 음식점과 집단급식소는 집단식중독이 다발하는 주요 위험장소이기 때문에 각 국가에서는 대량조리시설의 식중독예방을 위한 매뉴얼을 개발하고, 사전 예방적 위생관리에 중점을 두고 있다. 최근 일본 후생노동성에서 대량조리시설의 위생관리 규정을 개정·시행하였기에 일본의 최신 동향을 정리하면서, 호주, 영국, 미국의 식품위생관리 매뉴얼들을 비교할 수 있도록 함께 정리하였다. 음식문화면에서는 한국과 다소 차이가 있는 국외현황이지만, 우리의 식생활도 세계 다양한 문화가 혼합되어 글로벌화 되어가고 있기 때문에 외국의 대량조리시설의 식품위생안전지침을 검토할 필요성이 있으며, 지속적으로 개정되고 개선되는 매뉴얼들을 지속적으로 모니터링하고 접목하여 국내 식품접객업소 등의 식품위생관리수준의 향상을 위한 기초자료로 활용하여야겠다. |
